Out of all the recipes in Nourishing Newborn Mothers, this is probably the one I make the most. I often substitute sweet potato as I prefer the taste, but you can use whichever one appeals to you. Both sweet potato and pumpkin have similar qualities.
This nourishing, warming soup is very easy to prepare. I made it this morning for a friend who is about to give birth. From start to finish, it took under 30 minutes – 5 minutes to prepare the ingredients and 25 minutes cooking on the stove. I don’t bother chopping anything too fine as I blend it up well after cooking. It freezes well.
